Possibilities of When I Grow Up

When I grow up, there are many things I want to do, to be and to try. Some are totally realistic, some are just completely ridiculous dreams, that will probably never become a reality. And that's OK with me! Those things are just as fun and exciting to dream about too :) But there are definitely many things I want to do and be and see and experience that are completely attainable. Hopefully, if I'm lucky/determined/motivated enough, I can accomplish some of these! The Possibilities of When I Grow Up seem endless, but here are some that I'm more focused on...


When I grow up, I want to have a really cute house, with super cute decorations and knick-knacks and stuff.  And I want to be able to keep it relatively neat and tidy.

When I grow up, I want to own a DSLR camera, and know how to use it properly, and take really great pictures of all my family and friends.

When I grow up, I want to be able to visit all 50 states of the United States. 17 down, 33 to go. (Eh, I would be OK if I never made it to Alaska. I mean, it's just toooo cold there for this Florida girl.)

When I grow up, I want to pet a real live penguin.

When I grow up, I want to be a great mama and a great step-mom. (I'll officially be a step-mom in October!)


When I grow up, I want to be healthy, and maintain a semi-normal body weight and diet. (Is that too much to ask?!)

When I grow up, I want to get a decent paycheck. I mean, it's not only about money, but I'd just love to have a good amount of it, and not have to scrape the bottom of the barrel each month. And I'd also like to be able to afford fancy vacations like...

When I grow up, I want to go back to New York City again, and explore so much more. And see another Broadway play, or two or four. And find the bestest ever New York Cheesecake, and enjoy a slice, or two or four...

When I grow up, I would loooove to be able to travel to Europe someday. I'd like to be able to visit Paris, Switzerland, Ireland (for Jeff), and Italy (let's be honest, for the pizza and pasta we know I love!!)


When I grow up, I want to have a puppy of my very own! And love it and play with it and name it something really super cute and snuggle it and love it forever.

When I grow up, I want to host fabulous dinner parties for my group of friends, complete with all homemade food by yours truly, followed by fun games and lots of laughing.

When I grow up, I want to be a real runner. Like, run for more than just a mile or two, and actually like it. And maybe even experience this infamous "runner's high!?"

Mainly when I grow up though, I just want to enjoy my life! I want to be happy and healthy and still crazy in love with my wonderful husband, living with our adorable children, just having fun and creating a great life together. When I grow up, I want to love being a "grown-up" and all that goes along with it!

P-cubed: Say My Name

Yesterday, lots of ladies around the blogosphere participated in a link up (with Amber @ Brunch with Amber) to share why they picked that particular name for their blog name. Well I was doing Weigh In Wednesday, so I missed it yesterday, but I decided to join in and link up just a day late :) So here's a simple story about why I picked my blog name, P-cubed/P-to-the-third, or better known as:
"Penguins, Pasta & Polka Dots."

So, I first started my blog in August 2010. I had just graduated college that April, and I moved away from the college town and a lot of my friends who still lived there. Then for the first 10 days of August, I went on an epic road trip with 5 of my best girlfriends from Florida > North Carolina > Tennessee > New Jersey > New York City, and then we reversed the whole thing back down. And it was amazing!! (And I just realized I've never written about it on this blog, so that'll definitely be coming up soon!) 

While on that trip, we got on the topic of blogs, because my friends Megan and Kaley already had them, and I kind of wanted to start one. I was afraid though that I wouldn't know what to write about, or that I wouldn't have anything interesting to say, and so I was kind of slow to take the leap. However, they convinced me that I would be good at it, and that I should just start one, for no other reason than to stay updated with my friends in other cities. 

So the very night I got back home from our road trip, I started setting up this here blog! I'm definitely a words kind of girl (meaning I love words, and hate numbers), and I've always been a fan of alliterations. Thus, I knew that's the direction I would go. And then from there, it just kinda happened pretty easily! Penguins, Pasta & Polka dots are easily three of my very favoritest things, and they just all flowed together so nicely! 

The first post wasn't anything exciting, but I sure liked writing it. And it definitely set into motion a momentum to keep me writing. I purposefully made my first post title start with a 'P'  as well, in order to mimic the title of  my new blog. Then the second one kind of happened on accident the next day. And then my friend Dani suggested I should make ALL of my post titles start with a 'P'! And decided to accept her challenge, even though I wasn't sure I could do it for very long. So as we were driving around town doing errands that day, my Mama, Papa and myself made a list of every single P word we could possibly think of, and I took notes on my little iTouch. We came up with hundreds of words that day! 
Now I keep a list of all the P words in a bulleted-and-alphabetized Word document, and strike through each one as it get's used. (Can you tell I'm a little weird and OCD about things sometimes? Please someone tell me you do weird stuff like this too...) Right now, there are 455 words on my list!! It gets added to occasionally as I think of new words or realize ones that have been left out. And I try to not repeat words I've already used in titles - but there are definitely still repeats. For instance - the three words penguins, pasta and polka dots have been used multiple times, but I've given those a free pass for unlimited repeats, since it is the blog title and all. But I'd say out of my 289 published posts, only about 10-15 of those have other repeated words! 
I hope some of you have noticed that each and every title starts with a P, because sometimes it's really tricky to think of something that makes sense with that post, but I work hard to figure it out each time! I know a couple of you have mentioned you noticed it, but only after months of following me! Haha :) I've considered trying to stray away from it, but I just can't seem to do that yet. So I'm going to try to keep it up for as long as possible on this here blog! 
Well, that ended up being wayyyy longer than I was expecting! Hopefully that wasn't boring for y'all, and that you still want to stick around, even after a rambling post such as this one...I'll try to be more exciting tomorrow, although I can't really guarantee that if this stupid cold won't go away! I'm still sucking down an enourmous amount of hot tea and Emergen-C, and going to bed early. Super exciting right? Anyways, at least it's Thursday, which means that we're getting very close to the weekend :) So happy Thursday!

Purchases, Trips & Cooking - First Things First edition

Hello there ladies, on this slightly dreary Tuesday morning. It's cold and rainy here, and I'm super tired today. Not the best start to my day. But I just gotta suck it up and move on of course. I'm going to tell myself that today WILL be a good day, and then I'll make it a good day. Simple as that, right?! Anyways, today is week five of our First Things First link up with my girl Hallie at Life: Oceanside, so let's get this going! Shall we?! This weeks topics are:

First major purchase of my own
My current laptop! My parents bought me one right before I went away to college in August 2006, and that baby got me through a lot during those four years. My mama got me a pretty, pink polka-dotted skin for her, and I named her Lucy the Laptop. (I like alliterations  remember?!) But then she started to wear down, and she definitely needed to be replaced. So in January 2011, I bought myself a new one! Seems weird that it was two years ago now, because I still consider it to be brand new sometimes. I went all out and got the best I could get (well, the best besides a Mac...) and upgraded her with all the bells and whistles I could afford. I couldn't bear to part with my original Lucy (she still sits in my room, unused in fact), and so my new one is also name Lucy as well!

First trip out of the country
For my high school graduation present, my Mama and I went on a cruise to the Bahamas! We went on Royal Caribbean, to their little private island and to Nassau. It was so much fun with just the two of us, and it was an amazing present for graduation. We went shopping and played bingo, and took a random scrapbook class on the boat one day. We went swimming, a lot, we went to fun shows and games and watched karaoke. We did as much as we could, and enjoyed every minute of that cruise! You can see a whole ton of pictures from it back HERE when I did my Throwback Thursdays to all-things-high school a while back, and here is a collage of just a few :)


First thing I learned to cook
I'm actually not too sure on this one, but I'm going to go with something like pasta salad. And here are a few reasons why I think that: 1.) My mama makes excellent pasta salad, and it's one of my favorite things she makes. 2.) It's one of the easiest things to make. Even for a silly teenager like I was! 3.) Hello, it's pasta. And in case you're wondering, here's a quick 'recipe' for the way me and my Mama make our yummy pasta salad.

Boil 'short' pasta of your choice. We like using tri-colored rotini. (That's the 3 colors of spiral noodles)
Dice up veggies: red & green bell pepper, vidalia onion, black or green olives...
I also add in a can of chick peas (garbanzo beans), and sometimes some pepperoni or cheese cubes. Depends how I'm feeling that day...
Then toss it all together with the pasta, in about half a bottle of Creamy Poppy seed salad dressing and add some salt and pepper to your liking.

What's great about this 'recipe,' is that you can change it up and make it however you really like it. You can add in different or new veggies and things, or make it super plain and simple with just noodles and dressing. Other veggie options could be: yellow banana peppers, cucumber, grape tomatoes, broccoli or corn. And you can add in whatever seasonings or spices  you like! Basically, it can be a kitchen-sink kind of pasta salad, but I guarantee it'll be delicious!

Pasta, Puppy & a State Park Weekend

Well, last Thursday and Friday were the worst days of whatever this sickness is, so I stayed home the whole time. I didn't shower or leave the house (except a quick doctor's visit) or eat hardly anything, and I was just pretty icky. I've felt pretty off the last five or so days, and my blogging seems a little labored right now, but I'm gonna just power through it anyways for a quick weekend update...


Friday night I was supposed to go camping with my Sunday school class, but just wasn't up for it. So instead my parents and I watched season 2, episodes 7-13 of "The Walking Dead" on Netflix. Then when we woke up Saturday morning, we watched season 3, episodes 1-4 from OnDemand. Whoa baby that show is craziness, and for some weird reason I'm enthralled with it. And I also had this cute puppy to snuggle with while I wasn't feeling good :)


Saturday afternoon/evening was spent at Jeff's house after he got home from camping. We watched "Horton Hears a Who" and just relaxed for a bit before dinner. Then we went to The Tomato Cafe in Havana to use my Living Social deal for pasta night. The pasta was good, and the town was already lit up for Christmas, so it looked so pretty :) Then we went back to his house to just chill and relax some more.


In case you're wondering - that is pesto sauce, not snot like Jeff said it looked like...

Sunday morning I went to church as usual, and then met Jeff to go for an adventure day with our state park pass! We drove a little over an hour Northwest to Marianna, Florida, to go to the Florida Caverns State Park. We paid a mere $8 per person, and got to go on an awesome tour of the caverns! I got a ton of awesome pictures (with my real camera even!), so I'll be sharing those later this week in their own post. We then took our time slowly exploring the rest of the park, and enjoying the nice weather! This makes state park #4 of 10 before my birthday! Then we randomly caught the Veteran's Day parade as we were leaving town, so we got out and watched that real quick!

This is all I got on my iPhone - the rest of them are on my real camera, so stay tuned for more, and better pics!

Sunday evening we were back in Tallahassee, and spent some time wandering around Ross just killing some time. And of course I found a few knick-knacks and things for myself as well. Then we went to the cheap theater and used my Groupon, so we saw "Looper" for "free!" Very interesting movie by the way!


And then Monday was a "holiday" since Vet's day was on the weekend, so we had the day off of work yesterday! We saw "Wreck It Ralph" yesterday morning, and it was a really cute movie! We loved the movie itself, and very much enjoyed the $5, morning ticket prices. Then we met my friend Lacey at Hobby Lobby, had lunch at Five Guys, and went back to Lacey's house for some craft time. I taught her how to make one of the mesh, bubble wreath things like I learned in my class last week, and hers looks great! We then just kind of sat around being lazy, eventually ate some pizza and then headed out.


I'm still not 100%, and I'm feeling pretty sleepy today. So I'm still going to try to rest some more tonight, and just take it easy. Maybe eventually I'll be back up to my normal self again. Just say a prayer or two for me in the meantime, and I would much appreciate that! Hopefully y'all had nice, long weekends as well, and that you also enjoyed yours! I'm unfortunately very behind in blog reading due to the sickness, so let me know what fun stuff y'all did for your weekend! And here's to a short, 4-day work week!

Pasta: Greek Style

Last night my Grandparents took my parents and I out to dinner. We went to a nice place up in Thomasville, Georgia, The Plaza Restaurant, and all had a lovely dinner together. All four of them got fried chicken meals for dinner, but I was trying to find a "healthier" option, so I went with pasta instead of fried food... does that count as "healthier?" Whatever, I don't care - because it was amazing.

I got Greek Spaghetti (one of the two chefs there is actually Greek, so there are a good number of great Greek options on the menu) and I loved it. I definitely want to try to recreate it myself sometime. Although I will probably use bow tie noodles instead, because I just prefer "short" pasta's, rather than "long" ones... Anyways, it was just chicken, tomatoes, kalamata olives and feta cheese, tossed into the noodles with garlic and oil, and sprinkled with fresh herbs. Yummmmm. (But I didn't eat that bread, because it was not actually yummy at all...)

Dinner was yummy, but it was a good thing Jeff wasn't with us, because my breath was kickin' after that meal. Oh well, it was worth it to eat such deliciousness.

Pepperoni Pizza Pasta Casserole

First of all, let's talk real quick about my new background/layout. Tomorrow is the first "official" day of fall (although Florida weather will choose to ignore that until probably Halloween or so...), so I intended to make my background something fall-ish inspired, or at least some fall colors. But then I found this purple polka-dotted beauty, and knew I had to do it. I mean those colors are perfect, right? And the whole thing is just so ME. And the colors match my new button perfectly. Check it out...see how good these colors go together? I'm loving it :)


And now...Pinterest recipe #2 (in just two short weeks) was debuted at my house last night! I've always loved cooking, and I'm so glad when I get a chance to do it for my family! So last night I made this glorious creation. It combined two of my favorites (PIZZA & PASTA!), so what's not to love?


The original recipe can be found here at this link, but I will be sharing it all here as well, because today I'm feeling a little less lazy than when I shared my fajita recipe the last time.This is a super easy recipe, so if you like pizza and pasta (if you don't, I'm sure we can't be friends anymore...), then try this for yourself, and tell me all about it!

Ingredients
2 pounds of ground beef (I actually used ground turkey though)
1 onion, diced
1 clove garlic, minced (I used garlic powder because we didn't have fresh)
1 tsp. Italian seasoning
2 jars of spaghetti sauce
16 oz. Rotini noodles (cooked first and then drained)
4 cups Shredded mozzarella cheese (family size bag)
Pepperoni

Directions
Saute beef/turkey in skillet with diced onions, garlic and seasoning. Then drain.
In a large bowl, combine cooked pasta, meat, sauce, and half of cheese.
Place mixture in a Pam-sprayed casserole dish. (I put this in one big one, and one medium sized one)
Sprinkle remainder of cheese generously on top, and add pepperoni's on top of cheese.
Bake at 350 degrees for 25-30 minutes, or until heated through and cheese is nice and melty!

We ate it with a simple iceberg salad and some garlic bread. And this stuff was a hit. At least in my book it was :) My family actually requested that we just use ground beef next time instead of turkey, but turkey is healthier, so whatever. So, I think you should hop on into your kitchen and give this one a go. It's a huge recipe though, so don't plan to cook it for yourself unless you want it for the next two weeks or so. We had seven people eating for dinner though, so it worked out great for us. And let me know what you think guys!



Also, I got crazy and made dessert too. We had three bananas that were on the verge of rotten, so I decided to make some banana bread. I'd never done it before, but it turned out great as well! And I used my great-grandmother's recipe. Wow! Think about how many times that same recipe has been made in my family. So crazy and so awesome! I love things like that - being able to use a family recipe that's been around for sooo many generations. So awesome!

Today after work I'll be making the drive over to St. Augustine to spend the weekend with some of my favorites for some girl time. I can't wait to go to the beach, and paint our nails, and play games, and shop downtown, and hold hands (Jenni & Kaley), and laugh so much we cry. I love these girls, and I'm so ready to see them!! Yay!

Pasta Paradise

During lunch the other day, Jeff and I watched part of an extremely mouth-watering show on the Travel Network, called Pasta Paradise. Holy moly - talk about torturous! Seeing all the yummiest looking pastas, and I'm just over here eating a turkey sandwich on a hot dog bun because we didn't have enough bread, and some BBQ Fritos. Oh the torture...

So even though I've never been to any of these places, I'm kind of doing a restaurant review, based solely on a short TV show. Here's some of the yummiest restaurants they showed while I was watching...

1. Bricco - in Boston, Massachusetts. The owner of this restaurant also owns ten other places around Boston, and all of them are Italian! And on top of that, he owns a little shop where a sweet little old lady HAND MAKES all of the pastas, all 50 different varieties! Whoa that's a lot of options, and a LOT of yumminess. Everything at this restaurant looked seriously delicious.



2. S'mac - in New York City, New York. Where all the best restaurants seem to congregate... (This was by far my favorite of the few that I saw, and the one I would most likely visit in real life.) Their specialty is mac-n-cheese, and only mac-n-cheese. But it comes in 12 different varieties! And they all look sooo good. You can get the original version with cheddar and american cheese, or you can branch out into something a little less traditional like Masala or Mediterranean. YUM. Or you can get a sampler with 8 of the 12 in a sectioned-off skillet. This would be my choice, with a friend to share it with of course... My eyes were bugging out of my head at the yumminess, when Jeff casually turned around and said, "Uh, so when do you wanna visit NYC?" I was like "Immediately. Let's go immediately." 




3. Marino - Hollywood, California. Once again, this place looks amazing and delicious. And I mean really, it's an Italian restaurant, that serves a ton of pasta, so what's not to love really? This one's a little pricier, but it's in LA, and I'm just positive that my wallet would go into immediate shock there, so why not just splurge a bit anyways?


Then there were others on the show that I didn't get to see before my lunch hour was over. I'm quite confident however that all of these were sure to look and taste just as wonderful and delicious as the rest of them. Click on their names below to check out the others as well...


Writing about this now and drooling over all of the pictures, I'm of course hungry, and would kill for some of that tempting mac-n-cheese. Why, oh why can't pasta be a health food and make me skinnier, instead of plumper? That's not kosher with me. Can someone work on changing that, please?! And thank you :)

Point by Point

Here's a quick list of a few of the things I'm looking forward to this weekend, broken down Point by Point....
  • Going with my wonderful boyfriend Jeff to take his cute boys to see Madagascar 3 tonight down at the cheap theater, complete with dinner at McDonald's followed by a large popcorn to all share. 
  • Probably going to the beach tomorrow - hooray!! I do love the beach :) However, if we don't go to the beach though, my Sunday school class has been invited to participate in a giant bouncy water slide thingy that looks like sooo much fun.
  • Our "Awaken" worship service at church tomorrow night. This will be the third one we've done this summer, and it's an amazing experience. If you're reading this from Tally, COME! It's at Bradfordville FBC, Saturday night at 6:30 p.m. in the McMillan Center. It's simply worship songs, prayer and scripture - but it's so powerful and moving. 
  • Singing with Ryan for the contemporary worship service at church on Sunday. I love singing with the praise band, but especially when it's with this guy. He's a great worship leader and friend, and I'm excited about it!
  • Spending Sunday afternoon relaxing a little bit after so many fun things this weekend.

Somewhere in there I will need to sleep, and probably eat a few meals here and there. Oh, and I will attempt to do a couple workouts with my "personal trainer" right now, Jillian Michaels. I'm currently on level 2 of the 30-Day Shred, and good lordy that thing is hard work! Hopefully I can kick myself in gear and get motivated a bit more, because that motivation is starting to slip a little bit...

Pasketti Squash

Um hello?! Where has Spaghetti Pasketti Squash been hiding all my pasta-loving-life?? This stuff is amazing. And healthy. And simple and yummy. And I would seriously like to know why no one has introduced it to me before.

Actually, my lovely friend Kaley told me about it back during our awesome girls' weekend in the beginning of April. We had all been talking about diets and healthiness and food and those things in general. Kaley then told us about a no-carb diet she tried for two weeks, and I decided I was going to give it a go. She suggested one of the things her and her husband ate during these two weeks was a lot of spaghetti squash. I remember having this conversation, but apparently I didn't file it away, because I forgot all about the spaghetti squash.

(I did in fact try the no-carb diet for two weeks in the beginning of April, and actually lost 6 pounds!! Even after an unnecessary meltdown from a painful weigh-in...)

Fast forward to June, and I finally tried the stuff for the first time! Jeff and I went out to eat at Ruby Tuesday one night for dinner. We were/are on a diet, and we were/are being very careful about eating healthy and making good food choices. Luckily for us, they have quite a few selections they've deemed "Fit & Trim," that are low in fat and calories. So from that menu, I ordered Spaghetti Squash Marinara, and it was sooooo good. I ate every. single. bite of this glorious plate. All 257 calories of it. Awesome. (And yes, you read that correctly - it was only 257 calories!!)

The best part is that my brain and stomach were tricked into thinking I was eating real pasta. But my thighs and belly were thankful that it was only veggies disguised as my favorite food. I'd say it was a Win-Win all around.

For Jeff's meal that night, he ordered grilled salmon, with grilled zucchini and roasted spaghetti squash as his side items, so he got to try the new stuff too. And he also loved it! So much in fact, I didn't even get to try a bite of his plain spaghetti squash with only salt and butter. (This actually happens to us a lot, and we joke about how few times I've gotten to try the food he orders...) And his whole meal was still only 386 calories!

We liked it so much that I was immediately whipping out the iPhone in order to do some research on the stuff. I had to know what it was and how I could get some of it myself! I can't wait to try cooking and making this myself sometime soon. Because I know it's going to be so healthy for me, but so delicious at the same time! And let's be real here - healthy foods aren't always the tastiest, and that's when I feel like cheating on my diet a little bit just to get some extra yummy-ness and flavor. But when I can treat myself with wonderful things like Pasketti Squash, it makes staying on my diet plan easy peasy!

Profile Facelift

In honor of my 1 Year Anniversary of Penguins, Pasta and Polka Dots, I gave the old profile a face lift. Do we like? I know I certainly do! (I'm very much into all things yellow right now, and so I'm loving this new color scheme.)

For the record though, my blog-iversary was actually August 11. But I'm celebrating a few days later... :)

Penguins, Pasta and Polka Dots

I own all of these penguins, including the penguin cookie jar. (You can make fun of me if you like, but I love my penguins...) My PJ pants are here. Mine and my sister's comforter's are both polka dots. (Mine the aqua/green combo and Meg's the pink/orange combo.) Those are also my books. And those are pasta recipes I like. ♥
